If you're just going to use for a proxy either FreeBSD, RedHat or Solaris would do the trick just fine.

I'm not a big fan of MS Server Products. I use Both FreeBSD and RedHat.

FreeBSD on a PIII 750 and Redhat on a Cobalt Raq4r

You can get both online.

Used Solaris 6 on our Sun Spark's when I worked for a local ISP. Solaris is pretty rock solid for doing what you want including firewall protection as well.

So three choices, all you can do is play with em and make up your own mind. They are all great Operating Systems.
