Texture Memory is like Virtual Memory and depending on the cards capabilities and your systems specs depends on the what the max of virtual memory that can be used.

RAM is just that, Random Access Memory. Some of the older cards can be updated, but finding chips will be the fun part. The cost of cards these days, it worth buying a newer one rather than older parts.
